The Easy Matic 1-lane Dark Meat Remover uses circular knives to cut the dark meat from the salmon fillet. The knives are adjustable, as is the cutting depth. The machine is equipped with a touch screen, and from this screen the operator can manage how the machine works, including the corrrect cutting depth for the fillet. The size of the filet is measured on the way into the machine.

The processing capacity is up to 20 fillets per minute.

The Dark Meat Remover can be very easily transferred into a Pinbone Remover, which means that one machine can do two jobs – remove the dark meat and remove the bones. Kaj Olesen also says that the machine is very easy to clean and maintain.
