Stand: 4-6067 Kroma A/S, Danish processing machinery manufacturer, will exhibit its new filleting machine for round fish at SPE 2009.

The first model of the filleting machine has been designed for trout but Kroma says that the machine will be able to process other species such as seabream and seabass in the future.

The filleting machine can process fish down from 150g and up to 1500g, but to keep a high yield it is necessary to adjust the machine in different steps. However, the company does say that the adjustment is very easy and can be done by the operators.

There is a headcutter connected to the filleting machine and this unit will cut the head and tail off the fish before it enters the filleting machine. There is space for two operators to put fish into the head cutter and the machine will have a capacity of up to 150 fish per minute, depending on the fish size.

It is possible to process round fish in the machine as there is a suction unit to remove the guts inside the filleting machine. The gut will be sucked away right after the abdomen has been cut open so it is easy to remove all of the gut. Before the fish enters the knives, a brush will remove the kidney blood to reduce the risk of contaminating the meat.

With the suction system, any stones in the fish will be removed before the fish reaches the knives. This means knife replacement due to stones in the fish will be eliminated, which will reduce costs.

Head and frames from the filleting machines are also removed from the machine by vacuum.

A unique system to adjust the knife makes knife replacement very easy. With the new adjustment system it is possible to run the machine with different knife sizes.
