Baader will be showing some of its Whitefish Programme at Seafood Processing Global in Brussels.

On display will be the company’s new filleting machine for whitefish (BAADER 582), in combination with the BAADER 59 skinning machine. Baader says that the combination of the two machines results in a more efficient work flow in the line and for higher economy.

The BAADER 582 has been designed to produce the best fillet quality, and has been designed in a completely new manner with respect to hygiene, food safety, maintenance, performance, fillet quality and production control. Due to computer controlled tools and self-adapting fish guides, fewer miss-cuts and fewer stops occur. This reduces necessary trimming effort in conjunction with best fillet quality.

A wide working range can be processed without adjustments and the customer can switch over between different species, for example cod, saithe or haddock, by easy settings via the Touchpanel.

The company claims that the quality of the fillet is probably the best ever in the world, especially in the high value loin area. The membrane in this area stays intact. Due to the new cutting process, without stickle and scraper knives, there is no stress on the fillet, which is extremely important with soft fish. The black belly skin is perfectly removed.

The BAADER 59 has been especially designed for cod, saithe and haddock and results in fillets “smooth like a mirror”. It is designed to handle fillets tail first, producing a shallow skinned high yielding fillet. A special feature of this machine is that the skinned fillet leaves the machine stretched out and separated from each other for easy inspection and further processing, and without the need for manual straightening.

The company will also display is BAADER 588 filleting machine for fresh or defrosted whitefish and the TRIO FDS 2000-2 whitefish skinning machine.

For salmon Baader will show the unique Baader SI automated harvest system, which takes advantage of the fish’s natural behaviour where they swim into the stun/bleed machines, with the absolute minimum of stress.

Baader will also display its BAADER 604, for clean separation of fish meat from bones, fins and skin.
