Royal Greenland, the world''s largest supplier of coldwater prawns and Greenlandic halibut will be presenting at this year’s conference discussing the topic of ‘Utilization of by-products in Greenland: Challenges, opportunities and innovation’.
Royal Greenland process more than 120.000 tons of raw materials on an annual basis, providing them with an excellent supply of high-quality raw materials that are an excellent candidate for value creation using otherwise discarded by-products.
Ole Mejlholm, Team leader of Corporate Quality at Royal Greenland will be the speaker presenting at Fish Waste for Profit 2020. Mejlholm holds a master degree in food science from the University of Copenhagen and a PhD from the Technical University of Denmark (DTU) and has more than 15 years of employment at the DTU. Ole has extensive experience in research, primarily from projects in collaboration with the food industry.
A common theme of Mejlholm’s work has been product development focusing on optimization of food safety and quality, primarily for different types of ready-to-eat seafood products.
Royal Greenland’s presentation will cover aspects including their innovative approach to participating in a four-year EU-funded research project (2019-2023) focusing on development and validation of new concepts for exploitation of by-products into e.g. bioactive peptide and protein-based ingredients.
