The new ST501 from STEEN has been developed to make eel fillets from smoked eels automatically, replacing a very labour intensive process which, up until now, was done by hand.

The filleting machine has the same yield as hand filleting but works three times as fast.

The machine first takes off the top fillet of the bone and then the bone of the bottom fillet. Both pieces then drop on the conveyor belt of the filleting machine and are taken to the next part of the processing line.

The machine is suitable for de-headed farmed eel between 140 and 240g and must have a temperature between 0° and 2° C to obtain an optimal result.

The ST501 filleting machine was the missing link in the company's complete automatic eel processing line which is made out of different machines that can be integrated into an existing line or can be modified as one processing line tailor-made to the customer's factory. All machines can also operate as stand alone units. The existing machines include rinsing machine ST380/S50 or ST380/S50P (with pneumatic control); ST915/S015 spear machine; de-heading machine ST503; STEEN ST600 automatic skinning machine; and ST504/24 STEEN eel gutting (stripping) machine.
