
Mike studied Catering at Bournemouth University before moving to Germany, as Chef de Partie at The Konigsee Hotel, Berchetsgaden in Bavaria. From there he returned to the UK and joined the Merchant Navy, working with Safmarine - S.A Vaal and Cunard - QE11. He became Head Chef at The Dolphin Hotel in Poole, eventually taking it into The Good Food Guide in 1978. After teaching Catering in Adult Education for a few years, he joined M & J Seafood in 1984, holding a number of posts within the company, including that of Purchasing and Marketing Director. Also a member of The Prince Charles’ International Sustainability Unit. Mike retired as Director of Fish and Seafood in 2016 and now runs his own Consultancy Firm - Aquaesea Ltd.
Mike represents The Global Aquaculture Alliance - GAA and its Best Aquaculture Practice - BAP for Foodservice, Processors, Farms, Hatcheries, Feedmills and RAS as the Market Development Manager EU and also sits on the GAA Board on a range of committees such as:
- Seafish Common Language Group
- City and Guilds Hospitality and Advisory Group
- Aquaculture Common Issues Group (ACIG)
Mike is also the International Development Director for the North Atlantic Seafood Forum - NASF. Held in Bergen Norway
He has travelled and spoken extensively over the last thirty years both in Sustainability in Food Service and in search of new and under-utilised species and aquaculture from responsible fisheries worldwide to bring back to the chefs in the UK, enabling them to diversify their menus and mitigate the pressure on North European stocks.
He lives near Oxford with his wife Adele and has a son and a daughter, who have entered into Finance and Law respectively. His hobbies include photography, golf (h 21!) and Sub-aqua.
