Gentle processing and a high yield are of great importance when skinning salmon.

The high requirements of salmon processing plants can be only met by a fish skinning machine that has been specifically adjusted for this product. German company NOCK says that its fish skinning machine Cortex CBF 495 SALMON with Active Skin Gripper meets these requirements.

The CBF 495 SALMON is an automatic fish skinning machine equipped with conveyor belts for highest occupational safety. A special pressure roller for salmon with adjustable balance weights and an air-filled soft balloon (optional) guarantee gentle and reliable fillet processing.

The skin can be pulled off the fish with a blunt blade (silver skinning) or removed with a sharp blade. In this case, the thickness of skinning can be adjusted precisely and, if required, the fat layer can be removed with the skin (deep skinning).

The CBF 495 SALMON is equipped with the NOCK Active Skin Gripper for perfect thin skinning with a sharp blade. The company says this technology has many advantages:

• Reliable and complete skinning of the fillets

• No remaining skin on the fish tail or at the sides of the fillet

• The loss of fish flesh is low compared to silver skinning. A maximum of 0.5% of the fish flesh remains on the skin, which means that the yield of fish flesh is near to 100%
