This year, the showhow celebrates its 10th anniversary and will be held at the Carnitech Salmon (now the Marel Salmon Division) premises in Nørresundby, Denmark, on 2 February.

In addition to the presentation and ongoing demonstration of a wide range of salmon processing equipment, keynote speakers will address issues of concern to the salmon industry.

The showhow will provide the first chance to see the new Marel filleting machine MS 2730 in action. The machine is not yet for sale, but Marel says it wants to give “an exclusive insight of what the next generation of advanced filleters is all about”.

Already on sale, the Marel ITM Intelligent Trimming Machine will trim salmon fillets automatically into pre-defined shapes. It is also a colour and weight grader and gives each fillet a grading signal according to weight, colour grade, and trim category. This grade signal is then used for grading the fillets into packing stations to ensure uniform quality of product in each box.

Also new are the multi angle SC 125 and 250 MA V slicers from Geba, which is part of Carnitech Salmon. The single lane SC 125 MA V will produce fixed weight slices and portions, while Marel claims that the double lane SC 250 MA is the fastest fresh slicer on the market.

Marel will introduce two new packing lines at the showhow. It will show packing fresh salmon fillets into boxes with ice, including fillet washing prior to packing. For smoked salmon it has a Geba SC 125 V slicer followed by a dynamic packing line for fixed weight slices.

The Cut ‘n Pack integrated portioning system combines the I-Cut 36 PortionCutter with integrated SpeedSort retraction conveyor with a Marel Tray Load System, M-Check RF8 checkweigher and a Marel WPL9040 weigh price labeller to portion, load, checkweigh and label fixed weight salmon portions.

The smallest of the I-Cut range of PortionCutters, the I-Cut 10, is said to be ideal for processors switching from manual to automatic cutting. It provides high speed portioning of salmon and whitefish products to fixed weight and/or length.

As is becoming increasingly common for large processing equipment manufacturers, Marel can offer complete processing lines for salmon. At the showhow, it will link up a filleting line including deicing, manual de-heading, de-sliming, filleting, manual active trimming line, fillet divider and vacuum pin-boning.

Lars Jøker, managing director of the Marel Salmon Division, says that automation in processing and yield recovery (yield management) “is ranking high on processors’ agendas and Marel has the capability to deliver the technology to deal with that”.

With regard to filleting and slicing, he said: “Our customers in certain markets are looking for pre rigor processing solutions, especially pre rigor pin boning, and high speed filleting and de-heading. When our customers are investing in more slicing capacity, they prefer fresh slicing over frozen slicing.

“Our new products have been well received,” he added.
