The first model of the filleting machine from Danish company Kroma A/S was designed for trout, however, with some changes inside the machine it now possible to make filets from defrosted mackerel.

The defrosted mackerel is very soft and it’s very difficult to obtain the right yield percentage and a good cut in such a soft fish.

By making some changes to how the mackerel is cut inside the machine, along with the pressure on the fish from the outside, Kroma says that the yield has been improved significantly.

The cut and the look of the filet have been improved by changes in the cut angle of the filet, as well as other changes in the machine.

The first of the mackerel filleting machines have been installed at Bond Seafood in Breda in the Netherlands.

At SPE Kroma A/S will also show a new way to dry bleed salmon and other large fish species.

The system does not use any water in the bleeding process and the cost to clean the water is eliminated. The system also works as a conveyor belt and can deliver the salmon directly in the GUTMASTER 8000 gutting machine for salmon without any need for an operator.
