Pinboner
Together with TRIO, the Baader-Group has developed a solution for removing pinbones in Atlantic salmon fillets post-rigor shortly after slaughtering. The company says that this new four-lane pinboner will make it possible to produce skinless and boneless salmon fillets with better quality and a longer shelf life.

Stunning and bleeding
Baader says that it offers the most humane and efficient method for stunning and bleeding salmon/trout and many other fish species.

The Baader/Seafood Innovations patented percussive stunning system is activated when the nose of the fish comes into contact with a stainless steel retracting trigger plate. This in turn activates a sensor to activate a circuit that mobilises the striker piston, which hits the fish’s head at high speed causing it to be instantaneously and irreversibly stunned.

This automated system takes advantage of the fish’s natural behaviour to lead them directly into the stunning units, with the absolute minimum of stress.

Trout deboning
The new BAADER 136 cuts the main and rib bones, as well as the gills, out of the trout with the highest yield possible. The result is a boneless trout, connected at the back, with head and tail which can be used as fresh product - ready for preparation - or frozen.

Filleting
Baader is also introducing a new Filleting Machine – the BAADER 588. This machine has been designed in the same manner with respect to hygiene, food safety, maintenance, performance and fillet quality as the company’s success story, the BAADER 581.

The BAADER 588 is able to run about 40 fish/min and the fillet quality is said to be extraordinary. The surface is very smooth, no gaping occurs and no bloodspots.

Separator
The newest member of Baader’s 600 separator series - the BAADER 604 – has been designed in a way that means that there are less loose parts on the machine, which optimises handling and cleaning. Each machine has a touch panel for easy operation and process control.
