Laitram machinery has launched a model ctx steam cooker with new features that meet the special requirements of shrimp tray cooking. The ctx''s optional extended discharge conveyor and convertible tray feeding platform help shrimp processors prevent product damage, improve safety, and increase throughput in tray cooking applicants:

Laitram's has added the CTX cooker to its already comprehensive range

The ctx's new discharge conveyor allows gentler product handling.

The new, longer discharge conveyor allows operators to intercept trays and tip cooked product into the chillier, thereby reducing product damage and improving product quality.

This platform makes tray feeding safer, easier, and faster by boosting operators to the optimal height for infeed access.

In its upright position, becomes a step that operators can stand on while feeding trays into the cooker.

Converting the platform is quick and easy - no tools required.

These options also make laitram's model CTX steam cooker more versatile, since cookers equipped with the new features can be used for bulk processing as well as tray cooking. For both applicants, the CTX gently processes shellfish in a pure, saturated steam environment (212oF, or 100oC).

The CTXcan be be paired with Laitram's model LCC compact chillier, Which dramatically reduces the core temperature of cooked product to preserve quality and prevent overcooking.

Additionally, the LCC compact chillier provides exactly the right capacity for the CTX's output.

Laitram offers a wide range of cooking and cooling equipment for different types of fish but specialising in equipment for shrimp.

Last year Laitram released its new G-8 shrimp grading system.
