Understandably, a transport time of 2 hours from Ensenada to San Diego in California is attractive to US distributors as it allows them to supply their customers with the freshest possible fish. It is for this reason that Baja fish has been receiving high praise from Sushi chefs in California who are deeming it to be of the highest quality.
