Baader’s new technology centre in the German city of Lübeck is designed to bring experts together to showcase the latest processing technologies.
The company used its first Salmon@Baader event to provide visitors with an opportunity to examine equipment, integrated systems and software, as well as giving them a unique opportunity to meet colleagues from the salmon industry.
“At this first event we displayed our latest salmon processing technologies, demonstrating the equipment and the software options to help to optimise raw material utilisation, reduce processing times, cleaning times and labour costs and to improve processes throughout the salmon processing value chain,” Baader’s Regina Dedow said.
The systems displayed included gutting with Baader 144, the Baader 1570 Speed Feed System, a washing robot for inside and outside cleaning, chlorine dioxide disinfection, salmon stunning and bleeding with the all new Baader 101, a filleting, trimming, pinboning and weighing line, and a variety of systems for by-product refinement.
“More than120 customers from around the world gathered at the BTC (Baader Technology Center) in Lübeck to see some of the major highlights for the salmon industry and had a very fruitful and enjoyable day,” she said. “Live presentations gave our visitors the chance to witness the advantages Baader offers at first-hand.”
“With the current challenges in raw material harvesting, customers face constant pressure to find a way to avoid degrading quality with rough and stressful handling of the sensitive product fish. Baader seeks to find the most humane and efficient method for stunning and bleeding of salmon/trout and many other fish species, utilising percussive stunning and bleeding technology. The unique Baader SI automated harvest system takes advantage of the natural behavior of the fish where they swim into the stun/bleed machines, with the absolute minimum of stress.”
The latest version of BAADER 101 is equipped with new stunning tools which adjusts itself according to each fish to guarantee a perfect cut.
The new Baader 144 Salmon Gutting Machine together with the new Speed Feed System is described as a game-changer in the salmon industry.
“It is revolutionary in regards to speed, cleaning performance, working range, hygiene etc. as well as an automatic camera detection of the cleaning result. Each single product can be automatically transferred to the best suitable processing unit - based on customer demands,” she said.
Within a wide working range of 2-11 kg the machine can run with only little adjustments via the latest, state-of-the-art electronic control box - no tools needed. It will be possible to store recipes for different species and sizes in a recipe archive for quick changeover.
The design of the Baader 144 follows the highest hygiene standards. It is prepared to be connected to CIP. Due to the re-designed hygiene the manual cleaning time is reduced significantly compared to the older Baader 142.
“The most efficient way to run Baader 144 is to combine it with the new Baader 1570 Speed Feed System. This automatic feeding system is revolutionary in performance and speed. This system can grow with the customer due to a module system. It can feed up to 8 Gutting Machines with nearly 100% hit rate. Every fish fed into the system will reach the gutting machine directly with a speed of up to 25fish/min. Gutted fish leave the machine through a central outfeed which can be connected to a scale system. This combination makes it possible to realise a full flexible distribution of the fish according to e.g. weight, k-factor, quality grading, physical and size information, etc, for further processing.”
