Baja California Sur-based regenerative aquaculture company Earth Ocean Farms (EOF) has introduced Santomar, its new consumer-facing brand, aimed at showcasing the quality and taste of its fish, as well as the processes it has implemented to respect the ocean, the environment and to add value for coastal communities.

“This new brand represents an important step towards generating a healthy ocean, helping to restore endemic species, and promoting economic growth in our region. Santomar is the name that defines our identity today, a wise choice, as it honours and shows the deep respect we have for our sea, its species and its people,” Santomar CEO Pablo Konietzko said.
Santomar is seeking to introduce the Mexican market to totoaba (Totoaba macdonaldi), produced in the Gulf of California and available all year round.
In farming these fully-traceable, white-fleshed fish, the company adheres to meticulous processes that ensure optimal breeding conditions and broodstock handling. They are cultivated in marine nurseries, utilising structures that take advantage of the latest regenerative aquaculture technologies.
According to Santomar, all the processes are designed, tested, continually monitored and improved upon to have a positive impact on the surrounding environment. It said the focus is on implementing sustainable methods, such as high-level infrastructure in the open sea, suitable environments for farming and rigorous quality controls that ensure the best conditions for the species.
An added value of Totoaba Santomar is the ability to identify each fish through a unique QR code, which certifies and provides transparency about its origin and harvest.
