Figures show that salmon sales surpassed £1.2 billion in the 12 months to June, making up 28% of all fish purchased in the UK. This year-on-year growth has outpaced the 4.8% rise across all fish sales.

Scottish salmon remains the UK’s largest food export, marking a significant milestone in the country’s seafood industry.

“Scottish salmon’s success as the UK’s biggest food export is well known, but salmon is also by far the most popular fish here at home,” said Tavish Scott, chief executive of Salmon Scotland.

“Salmon accounts for more than a quarter of all UK seafood sales, with consumers eager for a highly nutritious, locally sourced meal.

“This reflects the strong consumer confidence in Scottish salmon, which remains as robust as ever.”

In the chilled seafood market, salmon retains its dominance, accounting for 48% of the value share among the top ten chilled species. It sells approximately four times more than its closest competitor – warm-water prawns – with smoked salmon accounting for just over a quarter of total salmon sales.

The sector is also experiencing a surge in exports, with third-quarter data showing an 11% increase in international sales, reaching £191 million between June and September. The nine-month total has already reached £622 million, surpassing the £618 million record set in 2019.

Exports to key markets such as France, the USA and China are driving the growth, with Taiwan and Singapore rounding out the top five.
