Cooper Technology, LLC’s Total Bone Removal System was first launched in 2002 and has recently completed a year’s worth of R&D to accommodate trout and Alaska pink salmon.

The developed system offers, one-step filleting and pinbone removal on fish ranging from 24oz to 18lb, saving labour and space.

The machine is designed for processing pre-rigor or extremely fresh fish, meaning that no waiting period is required to pull pinbones, increasing shelf life. Pinbones are removed by a 'U' cut process.

The throughput is 20 fillets per minute, with seven people on line, but higher speeds of up to 36 per minute are achievable.

The complete processing line includes:

• Header/tailer

• Belly flap remover

• Gutting / washing station

• Fillet machine

• Trim / inspection conveyors

• Cross conveyor to combine fillets onto one conveyor

• Gut and trimmings conveyor
