Fomaco needles Brussels
Denmarks Fomaco will be presenting its new M3 generation of fish injectors in Brussels, with two needle bridges for an ultra close needle pattern. It says this gives the best possible brine distribution in the fish at low brine pressure, so avoiding any damage to the delicate fish meat whether it be salmon, trout, cod, Nile Perch, tuna loin etc.
Fomaco says that in some countries the accepted water level in smoked salmon has to be 62%/63%. “Due to this more customers have changed their curing process to the combination of injection and dry salting by means of the Fomaco drysalting system named BAFO 6.”
However, Fomaco says it also offers technology for the injection of oversaturated brine solution using micro salt in suspension and this means than one only needs to use a few percentages of water to cure the salmon correctly without increasing the water level in the final product. The injector is equipped with an automatic self-cleaning filter to prevent the needles getting blocked. (Hall 4 – Stand 5343)
