Laitram Machinery, the company that pioneered automatic shrimp processing, will be displaying the FC Cooker and the new Model VAC 16 Salmon Cleaner at Seafood Processing Europe.
In addition to manufacturing high-performance shrimp processing equipment, Laitram Machinery is now equipping salmon processors with a new salmon cleaner. This innovation in salmon processing completes the cleaning process of aquaculture salmon. The cleaner reduces the labour needs of salmon producers by using patent-pending, fully automated vacuum technology to scrape and clean fish of 2-7 kilos in size at a rate of 16 salmon per minute. Fish can be automatically fed into the VAC 16 Salmon Cleaner from a fully automatic gutting machine, achieving perfect cleaning without any product damage.
The FC Cooker features a unique, patented ‘forced convection’ process of cooking to produce a higher yield of better-looking and better-tasting shrimp. Shrimp are cooked in a sealed chamber where a homogenised mixture of steam and air is forced over them, with an adjustable cooking temperature uniform to better than a half degree. The FC Cooker is available in two different models, equipping both processors who cook shrimp using tray-feeding methods and those who use bulk-feeding methods for fully peeled, peeled tail-on, or shell-on shrimp.
For over 50 years, Laitram Machinery has manufactured high-performance shrimp-peeling systems, shrimp graders, seafood steam cookers, and chillers.
