The first steps in Baader’s new advanced Whitefish Processing Line will be shown at SPE - the BAADER 582 Filleting Machine and the BAADER 59 Skinning Machine.

The whitefish solution starts with the heading and gutting machine - the BAADER 444. It is designed for ergonomic, easy and safe infeed, high yield due to very precise bleeding cut, throat cut, head cut and belly cut.
The BAADER 444 leaves the undamaged collarbone on the fish-trunk. Due to the fact that the trunks, heads and guts (nearly undamaged) are separately transported out of the machine, there is no contact between guts and trunks and no contamination can take place.
The new Filleting Machine, BAADER 582, follows the BAADER 444 on shore. It is designed in a completely new manner with respect to hygiene, food safety, maintenance, performance, fillet quality and production control. Due to computer controlled tools and self adapting fish guides, fewer miss-cuts and stops occur.
A wide working range can be processed without adjustment and the customer can switch between different species, e.g. cod, saithe or haddock via the touch panel.
The quality of the fillet is very high, especially in the high value loin area, as the membrane in this area stays intact. Due to the new cutting process, without stickle and scraper knives, there is no stress on the fillet.
A newly designed collar bone cutter will be integrated later on in the machine. This additional tool will save yield, quality and labour.
The filleting machine can be combined later on with the BAADER 59 Skinning Machine. The company says that the combination of using the BAADER 582 with BAADER’s state-of-the-art Whitefish Skinner is one main component of BAADER’s Future Total Whitefish Solution, which produces fillets as “smooth as a mirror”.
