3X's sales manager, Davíð Waage tells World Fishing that the freshness of the raw material is based on the right handling throughout the processing and handling process. If the first steps damage or decrease the value of the product, then there is little that can be done to recuperate that freshness and natural quality.

The main factors that damage fish and decrease its quality are: too short bleeding time; too much or too little cooling; and not enough hygiene after the bleeding process.

3X Technology has developed and designed, along with the demanding Icelandic fisheries sector, a spiral tank that controls the bleeding and cooling process. The tank ensures that all material is given exactly the same bleeding and chilling time, ensuring even quality. The first material to go into the tank will also be the first material to exit it and there is no danger of delicate material being damaged due to overflow and pressure, because the tank guarantees that all material receives the right treatment.

The tank can be used with seawater, and it is possible to control the heat of the water and the processing time by very simple controls.

The bleeding tank is fully automatic and reliability is extremely high due to the few moving parts, slow speed and robust design. The fish is exposed to very little pressure and is gently handled in every step, whilst increasing throughput and the quality of the fish. Smooth surfaces and open design ensure easy cleaning.
