In the food industry, and even more so in the industrial fishing sector, freezing processes are extremely important.
The quality of the product depends on the freezing procedure and the temperature reached during the process. Therefore, one of the technological areas where KINARCA has focused its efforts is Ultra Low Temperature Freezing (ULF).
This technology helps to preserve the quality of the product both in terms of microbiological/biochemical and organoleptic properties. Freezing at -60ºC not only guarantees the full health value of the fish, but through a proper defrosting process, the fish retains its original flavour and texture. Ultra-low temperatures are also used in the pharmaceutical industry and in various industrial processes.
One of KINARCA’s recent projects with regards to the use of deep freeze technology, is the production and installation of refrigeration equipment onboard two new vessels for tuna fishing in the Indian Ocean. These tuna fishing vessels have two fast-freezing tunnels at -60ºC, two conservation tanks at -60ºC and 14 tanks at -20ºC.
“Currently, we are developing freezing plants with a capacity of up to 40 tonnes per day at -60°C with compact, highly-efficient refrigeration units of class BV, DNV and LRS,” the company says.
“With the evolution of new technologies and refrigerant requirements, we are constantly working to modernise our equipment, while also adapting to the changing needs and demands of the market through our latest developments in deep-freezing technology.”
