Dutch company Innotec Systems has launched its brand new Impingement-Flash Cooker - water cooking technology for shrimp and other crustaceans.

This patented cooking technique uses heated water to cook the product and works on relatively low temperatures.

Innotec says that this gentle way of cooking results in a product of excellent quality, significant better yield and optimum food safety.

The process can be controlled according to multiple adjustable temperature zones and the belt has been designed to avoid product damage and avoid spread in cooking times.
