Wageningen University’s Geert Hoekstra and the ‘Nose of the salmon’ project

Sharing real-world success stories around full utilisation strategies offers one of the great takeaways from the 100% Fish For Profit Conference, and Geert Hoekstra from Wageningen Social & Economic Research has some exceptional insights to share. 

As an economic seafood researcher at the institute, which is part of the world renowned Wageningen University & Research (WUR), Hoekstra is a member of a team that drives fair and sustainable food systems through evidence-based insight.  

Speaking in Session 2 – Blueprints for Success: What is transferable to other companies and ecosystems – he will share experience from the two-year ‘Nose of the salmon’ project, a Dutch initiative focused on upgrading seafood rest-stream products and side-streams from salmon processing into high-value food ingredients. 

The presentation will entail more insights about the Dutch seafood processing industry, and from the WSER project which evaluated consumer acceptance, economic feasibility, and sustainable supply chains for these upcycled seafood products. 

A specialist in value chain and social economic analyses of fisheries and aquaculture products in the Netherlands and Europe, alongside his work at WUR Hoekstra also has a part-time role in maritime vocational education where he stimulates applied research and innovation in fisheries education. 

Speaking on the opening day of 100% Fish For Profit – 23-24 September 2026 – he will be joined in the session by David Naftzger, Executive Director at Great Lakes, Kristian S. Ottesen, Director at Royal Greenland, and Laura Anderson and Darlene Khalafi, respectively the Founder & CEO and Business Innovation Specialist at Local Ocean from Oregon.
