Denmark''s CP Food Machinery is introducing its P4000 system into the market which it says is a complete solution for the efficient production of sliced salmon and similar fish species in party packs for retail.
CP's Knud Knielsen says the P4000 slices and then places the slices directly on golden boards or in trays without the slices ever touching the conveyor. This considerably reduces the risk of bacteria spreading, he says. It can also work as double lane slicers and other benefits include maintaining fresh quality throughout the process line from start to finish.
Reduced handling means higher quality, lower payroll costs, increased throughput speed and waste is low at fresh slicing, max. 0.5--1%. The slices on the boards originate from the same fillet and display no colour difference.
Computer-controlled
The P4000 is computer-controlled by CP's advanced slicing system that makes it possible to enter programs to ensure that various parameters such as slice thickness, slicing angle and speed adjust to the profile of the fillet during the slicing process. This means a more uniform slice weight throughout the fillet.
All slicing parameters are displayed on an easy-to-operate touch screen. Simple, step-by-step programming is carried out directly on the touch screen. The computer memory stores up to 100 different programs.
The advanced slicing system increases the yield by 10-20% more useable slices depending on the requirements for slice weight.
